This easy, fresh, delicious salad starts with a bed of cottage cheese and has lots of fresh vegetables and herbs. It's finished with fresh lemon juice instead of a heavy salad dressing.
2 c. 2% cottage cheese
1/2 c. cucumbers, sliced into half moons
1/2 c. cherry or grape tomatoes, halved
1/3 c. fresh english peas
2 T. red onion, minced
2 T. fresh dill, chopped
2 T. green onion, minced
2 T. sunflower seeds
1 1/2 T. lemon juice
1/8 t. pepper
1/8 t. salt
crackers, tortilla chips, toasted French bread slices, pita, naan, for serving, optional
Spread the cottage cheese out on the bottom of a platter or a large plate.
Evenly distribute all of the vegetables on top of the cottage cheese. Drizzle the lemon juice over everything; season with salt and pepper.
Serve.
