Greek Artichoke Salad

Description

Everyone will go nuts for this simple to make salad with Mediterranean flavors. It's the perfect spring and summer salad to serve at home or to take to gatherings.

Ingredients

Salad:
14 oz. quartered marinated artichoke hearts, drained
4 oz. crumbled feta cheese
4 oz. Kalamata olives, pitted
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1/2 pint grape or cherry tomatoes
1/2 red onion, chopped
bag fresh spring mix

Vinaigrette Dressing:
1/4 c. olive oil
2 T. wine vinegar
1 t. dried oregano
1 T. freshly squeezed lemon juice
4 oz. spring mix

Vinaigrette Dressing:
In a small bowl, whisk together olive oil, vinegar, oregano and lemon juice.

Salad:
In a large bowl, combine artichokes, feta cheese, olives, bell peppers, tomatoes and onion.

Pour vinaigrette dressing on top of artichoke salad mix. Toss gently to combine. Refrigerate until ready to serve.

Serve on a bed of fresh spring mix.
