Everyone will go nuts for this simple to make salad with Mediterranean flavors. It's the perfect spring and summer salad to serve at home or to take to gatherings.
Ingredients
- Salad:
- 14 oz. quartered marinated artichoke hearts, drained
- 4 oz. crumbled feta cheese
- 4 oz. Kalamata olives, pitted
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1/2 pint grape or cherry tomatoes
- 1/2 red onion, chopped
- bag fresh spring mix
- Vinaigrette Dressing:
- 1/4 c. olive oil
- 2 T. wine vinegar
- 1 t. dried oregano
- 1 T. freshly squeezed lemon juice
- 4 oz. spring mix
Steps
- Vinaigrette Dressing:
- In a small bowl, whisk together olive oil, vinegar, oregano and lemon juice.
