Get the flavor of beef stroganoff in a more economical recipe using ground beef. It's perfect for nights when you need a quick dinner that's still delicious and satisfying.
1 lb. lean ground beef
1 medium onion, chopped
2 cloves garlic, finely chopped
10 3/4 oz. can condensed cream of mushroom soup, undiluted
4 oz. mushrooms, chopped
8 oz. sour cream
hot cooked wide egg noodles
chopped parsley, for garnish, optional
Cook noodles in well salted boiling water according to package directions; drain; set aside, keeping warm.
While noodles are cooking, cook ground beef, onion, and garlic over medium heat in a large skillet until meat is no longer pink; discard grease.
Stir in soup; simmer, uncovered for about 10 minutes. Stir in sour cream; cook until mixture is hot. DO NOT BOIL.
Serve over hot cooked noodles, garnished with chopped parsley, if desired.
