Taco Tuesday doesn't have to be tacos. Make a burrito casserole instead. It's actually much simpler and delicious too.
1 c. Bisquick Pancake and Baking Mix
16 oz. can refried beans
1/2 c. water
1 lb. ground beef
8 oz. taco sauce
1 1/2 c. shredded Cheddar or Mexican cheese
optional toppings: sour cream, lettuce, guacamole, avocado slices, deiced tomatoes, black olives
Preheat oven to 375 degrees F. Spray an 8 x 8 or 9 x 9 inch baking dish with non-stick cooking spray.
Brown and crumble ground beef in a medium skillet over medium heat. Discard excess grease.
In the same skillet, combine ground beef with taco sauce.
In a medium bowl, add Bisquick, water, and refried beans; stir.
Spread mixture into the prepared baking dish to make the crust.
Spread the ground beef mix over crust. Sprinkle the top with shredded cheese.
Cover baking dish with aluminum foil.
Bake 25-30 minutes. Allow to cool for a few minutes.
Serve with toppings of choice.
