Description
This coleslaw is truly special and is perfect for the holiday season. It features a creamy maple balsamic dressing with green cabbage, candied pecans, apple and dried, sweet cranberries.
Ingredients
- 1/4 c. mayonnaise
- 2 T. balsamic vinegar
- 2 T. extra-virgin olive oil
- 2 T. maple syrup
- 1/2 t. kosher salt, plus more if needed
- 1/4 t. black pepper, plus more as needed
- 4 c. shredded green cabbage (from about 1/2 head cabbage)
- 1 large apple, cut into matchsticks (any kind)
- 1/2 c. thinly sliced red onion (from about 1/2 medium onion)
- 1/2 c. dried, sweetened cranberries
- 2 T. chopped fresh parsley
- 1/2 c. candied pecans, chopped
Steps
- In a large bowl, whisk together the mayonnaise, the vinegar, the olive oil, the maple syrup, the salt, and the black pepper until smooth.
- Add the cabbage, apple, red onion, cranberries, parsley, and pecans.
- Mix everything together. Adjust seasonings, to taste if necessary.
