Use your instant pot to make a creamy, delicious soup that tastes like Panera's black bean soup. It's a quick, easy, healthy meal that's gluten free and vegan.
Ingredients
- 1 T. olive oil or water
- 1 onion, chopped
- 2-3 garlic cloves, minced
- 2 celery stalks, chopped small
- 1/2 red bell pepper, chopped small
- 1 small carrot, diced small
- 1 1/2 t. cumin
- 1 c. dry black beans, rinsed
- 3 c. vegetable broth
- 1 t. salt, plus more to taste
- 2 T. freshly squeezed lemon juiced from 1/2 lemon
- optional garnishes: cilantro, avocado slices, salsa
Steps
- Set instant pot to saute on High.
- Cook the onions and garlic in 1 T. olive oil or water for 2-3 minutes. Add the celery, red bell pepper, carrots and cumin; cook for 3 minutes. Add in the dry black beans, vegetable broth and salt; stir.
- Press Cancel; set to Manual on High for 30 minutes. When time is up, manually release the pressure.
