Description
If you're looking for the perfect Thanksgiving side dish, look no further. It's will be the star of the side dishes, with a brown sugar and pecan topping that is to die for. It can be made in advance to save time and stress.
Ingredients
- 4-5 large sweet potatoes
- 3 large eggs
- 1/2 c. evaporated milk, cream or half and half
- 1 t. vanilla extract
- 1/2 c. granulated sugar
- 1/2 t. salt
- 1/4 c. butter, melted
- Topping:
- 3 T. butter
- 1/4 c. all-purpose flour
- 1 c. light brown sugar
- 1 c. pecans, chopped
Steps
- Place the sweet potatoes in a large pot with enough water to cover the potatoes a little more than half way. There should be at least 3-4 inches of water. The water will not completely cover the potatoes.
- Bring the water to a boil; turn heat to a medium simmer; simmer until they're fork tender, which may take 20-40 minutes depending on the size of the potatoes. Be careful because you don't want them to be mushy.
- Preheat oven to 350 degrees F. Lightly grease an 8x11 or 9x13 inch casserole dish.
