No-Bake Twinkie Cake

Description

This yummy cake takes about 10 minutes to assemble and 1 hour to chill, so it's a great last minute dessert to serve or take when you have little time. Be prepared for everyone to ask for the recipe, it's so good.

16 oz. fresh strawberries, divided
9 Twinkies, unwrapped
3.4 oz. box instant vanilla pudding
1 1/2 c. whole milk
8 oz. whipped topping, thawed

Wash strawberries and discard hulls. Dice 3 or 4 strawberries into small pieces, making about 1/3 to 1/2 c. diced berries; set aside. Slice remaining berries into 1/4 thick slices; set aside.

Place Twinkies in the bottom of an 8×8 baking/casserole dish.

In a medium bowl, whisk together the instant pudding mix and whole milk for 3 minutes or until thickened. Spread the vanilla pudding evenly over the twinkies in the baking/casserole dish.

Arrange the 1/4 inch sliced strawberries in a single layer covering the entire surface of the Twinkie cake. Top the strawberry slices with the thawed whipped topping, using an offset spatula to smooth it out.

Sprinkle the small diced strawberries over the twinkie cake.

Refrigerate for 1-2 hours to allow the pudding layer to firm up.

Serve.
