Description

The is the perfect, delicious side dish for special occasions. It's elegant but simple to make. The toasted almonds provide a crunchy, nutty contrast to the tender green beans.

Ingredients

  • 12 oz. green beans, preferably haricot verts, ends trimmed
  • 2 T. sliced almonds, toasted
  • 1 T. extra-virgin olive oil
  • 1 shallot, thinly sliced
  • 1/2 t. sea salt, plus more for seasoning
  • 1 garlic clove, grated
  • 1/2 T. fresh lemon juice
  • freshly ground black pepper

Steps

  1. Bring a large pot of well salted water to a boil. Place a large bowl of ice water nearby.
  2. Drop the green beans into the boiling water; blanch for 2 minutes. Drain; immediately immerse in the ice water to stop the cooking process. Drain; transfer to a towel to dry.
  3. Heat a cast-iron skillet over medium heat; add the almonds to the dry skillet; toast until golden brown, 2 - 3 minutes. Remove the almonds from the skillet; set aside.
