Banana Cream Icebox Cake

Description

This no-bake dessert is easy to prepare with just a few simple ingredients. It has a delicious banana flavor that everyone will love.

6.8 oz. (2 boxes) INSTANT banana cream pudding mix
3 c. cold milk
16 oz. Cool Whip (2- 8 oz. containers)
3 sleeves graham crackers
fresh banana slices and mint leaves, for garnish

In a large bowl, add the pudding mix and the milk; whisk until combined; mix until it starts to thicken, about 1 minute.

Fold in 8 oz. Cool Whip: set aside.

Place one fourth of the graham crackers into the bottom of a 9×13 inch baking dish, breaking some crackers to fit.
Spread one third of the pudding mixture on top. Repeat two more times.

Layer the remaining graham crackers on top. There will be some crackers left over. Keep them for garnish, if desired.

Spread out the remaining Cool Whip, covering the graham crackers. Cover with plastic wrap. Place in the refrigerator for at least 6 hours or overnight.

Top with some crushed leftover graham crackers. Garnish with fresh banana slices and mint, just before serving.

Keep refrigerated.

Serve.

12-15 servings.
