Description

This casserole is so easy to make, it's a great for those busy weekdays when time is short. It has a mouthwatering Tex-Mex flavor, that's not spicy.

Ingredients

1 1/2 lb. lean ground beef
1 red bell pepper, seeded and chopped
1 onion, chopped
1 oz. taco seasoning mix
2 1/2 c. Bisquick
1 c. water
Pam cooking spray
1/2 c. sour cream
1/2 c. mayonnaise
4 oz. canned, diced green chiles, well drained
1 1/2 c. Cheddar cheese Fiesta Blend, shredded, divided
1 t. garlic powder
1/2 c. mild salsa

Preheat oven to 350 degrees F. Spray a 9x13 inch casserole dish with cooking spray.

Cook ground beef in a large skillet over medium high heat, breaking the meat apart and stirring as needed until no longer pink. Discard excess fat.

While the meat is cooking, make the biscuit dough. Place the biscuit mix and water in mixing bowl; mix with your hands until thoroughly mixed.

Press the dough all the way to the edges of the prepared casserole dish.

Bake 5-8 minutes until set and lightly golden; remove from oven and set aside. DON'T turn the oven off.

Add the onions and bell pepper to the ground beef; stir. Cook about 4 minutes; add taco seasoning; stir to coat. Remove from the stovetop.

Spread the ground beef mixture out on top of the biscuit layer, spreading evenly to the edges.

In a medium bowl, combine the sour cream, mayonnaise, green chiles, 3/4 c. shredded cheese and garlic powder; mix well. Carefully spread the sour cream mixture out on top of the ground beef mixture.

Add small dollops of salsa intermittently on the sour cream layer. Spread the remaining cheese evenly on top.

Bake, uncovered for 30 minutes until warm and bubbly.
