Easy Taco Salad

Description

This is an easier version of taco salad. Instead of a taco shell, it's made with tortilla chips, a can of chili beans and the typical ingredients. It's an easy weeknight meal that kids can help prepare.

Ingredients

1 lb. lean ground beef
16 oz. can chili beans or black beans
16 oz. French, Ranch or Thousand Island dressing
1.25 oz. package taco seasoning mix
14.5 oz. package tortilla chips, Fritos, or flavored Doritos, crushed
1 head iceberg lettuce, shredded
2 c. shredded Cheddar or Mexican blend cheese
1 c. chopped tomatoes
1/2 c. prepared salsa, optional
4 T. sour cream

* Optional toppings could include jalapenos, corn, pico de gallo, avocado, black beans, guacamole, onions, and black olives.

Heat a large skillet over medium-high heat; cook and crumble ground beef in the skillet until browned and crumbly, 5 - 7 minutes. Discard grease.

Stir in chili beans, dressing, and seasoning mix. Add 10-11 oz. water to the skillet. Bring to a boil; reduce heat; simmer for 15 minutes.

Crush the chips while still in the bag; open the bag; toss crushed chips into a large bowl.

Add cheese, tomatoes and meat mixture to a large bowl; mix well.

Fill another bowl with lettuce.

Top individual servings with meat mixture, salsa, sour cream, lettuce and crushed chips.

Serve warm.
