This economical main dish is easy to prepare with just a few ingredients. The typical breadcrumbs or crushed crackers are replaced with your favorite Stove Top Stuffing, giving it delicious extra flavor.
1 lb. ground beef *
1 box Stove Top Stuffing, favorite flavor
2 large eggs, beaten
1/2 c. ketchup or BBQ sauce, divided
1/2 c. water
Preheat the oven to 350 degrees F. Grease a bread loaf pan.
In a large bowl, mix together the ground beef, dry stuffing mix, beaten eggs, water and HALF of the ketchup.
Place the mixture into the prepared loaf pan. The mixture could also be formed in a loaf shape and placed on a foil lined rimmed baking sheet. Fold the edges of the foil up to keep the beef juices contained for easier clean-up.
Spread the remaining ketchup/sauce on top.
Bake for 45-50 minutes or until the internal temperature reaches 160 degrees F.
Allow the meatloaf to rest for about 5 minutes before slicing.
Serve.
6 servings.
* A higher fat ground beef is best for this recipe. The stuffing absorbs a lot of the moisture. If using a lean ground beef, a little extra water, a splash of milk or an additional egg may need to be added.
** Add diced onion, chopped garlic, shredded cheese, spices or fresh herbs to the beef mixture before baking, if desired. Slices of bacon could be placed on top for extra flavor.
