This salad comes together in about 15 minutes and is the perfect dish for a summertime gathering or potluck. It has all of the typical caprese salad ingredients plus diced avocado for creaminess.
Salad:
1 pint (2 c.) red cherry or grape tomatoes, sliced in halves
1 pint (2 c.) yellow cherry or grape tomatoes, sliced in halves
2 large avocados, pitted, peeled, and diced
8 oz. mini-mozzarella balls (in the fresh cheese section of the grocery store)
1/2 c. fresh basil, chiffonade
Dressing:
3 T. honey
3 T. white balsamic vinegar
3 T. extra virgin olive oil
1/4 t. salt
1/4 t. black pepper
Salad:
In a large bowl, toss together the tomatoes, avocado, mini mozzarella balls, and basil.
Dressing:
In another small microwave safe bowl, heat the honey for about 15-20 seconds in the microwave to thin it out. Whisk it together with the white balsamic and olive oil.
Pour the dressing over the salad. Season with salt and pepper. Toss to combine.
Serve.
