This potato soup is easy to make in your slow cooker. It starts with shredded hash browns which saves effort and time. Add some broth, cream of chicken soup and onion and you have a delicous homemade soup.
30 oz. bag shredded hash browns
5 1/2 c. chicken broth
1 can cream of chicken soup
1/2 c. chopped onion
1/4 t. black pepper
1 pkg. full-fat cream cheese, at room temperature. (fat free, will not melt)
About 1 hour before serving, place the cream cheese in a bowl, add several ladles of the hot soup; stir well; add back to the soup.
Serve with choice of shredded cheese, sour cream, bacon bits, or chopped green onions.
