Description
These potatoes will have you dancing out of your shoes. They are so good, there won't be any leftovers.
Ingredients
- 3 lb. red Russet potatoes, washed, quartered and cut into equal size pieces
- 1 bunch green onions, sliced
- 1 stick butter, diced
- 1/2 block Velveeta cheese, cut into small cubes
- Randy's Rubs This is It seasoning, to desired taste*
- 8 oz. sour cream
- 4 oz. bacon bits
Steps
- Boil the potatoes until just fork tender; drain.
- In the same pot while the potatoes are still warm, add in half of the butter, half of the half block of Velveeta cheese, half of the green onions; season well with Randy's Rubs This is It seasoning. Use a potato masher to mash them but don't over mash.
- Add the remaining butter, sour cream, bacon bits, remaining onions and Velveeta cheese. Mix all with a large spoon.
