Even dreary days can be brightened with this simple orange salad. It's bright and sunny from the citrus flavor of oranges, sweetness from honey, mixed with green onions, almonds and Feta cheese.

Ingredients

4 navel oranges, 3 peeled with pith removed, 1 juiced (1/4 c. juice)*
1/4 c. extra-virgin olive oil
2 T. honey
2 green onions, thinly sliced
1/4 t. salt
1/4 c. slivered almonds, for garnish
1/4 c. crumbled feta cheese, for garnish

Cut oranges into slices or wedges; transfer to a serving plate.

In a small bowl, whisk together the orange juice, olive oil, honey, green onions and salt. Drizzle this over the oranges.
