Ingredients
- non-stick cooking spray
- 1 stick butter, softened
- 3/4 c. granulated sugar
- 2 large or extra large eggs
- 1/2 t. vanilla extract
- 2 T. freshly squeezed lemon juice
- 1 1/2 T. lemon zest
- 1/2 c. all purpose flour
- 1/4 c. whole wheat pastry flour
- 1/4 t. Kosher or sea salt
- 1/4 t. baking soda
- 1/4 t. baking powder
- Lemon glaze:
- 1/2 c. sifted powdered sugar
- 2 T. freshly squeezed lemon juice
- 1/2 t. cold water, if needed
- lemon zest, for garnish
Steps
- Preheat oven to 340 degrees. Lightly spray a non-stick 8 or 9 inch square pan with cooking spray; set aside.
- In a large mixing bowl, using a hand held mixer or stand mixer, beat the softened butter with the sugar until fluffy. Add eggs one at a time until well incorporated; add vanilla extract; add lemon juice and zest; mix just until combined.
- In a separate bowl, whisk together flours, salt, baking soda and baking powder; add flour mixture into the wet ingredients; beat at medium speed for 1 - 2 minutes, until nice and creamy.
