Snickerdoodle Muffins

Description

Enjoy one of your favorite cookies in a muffin. They are light, soft and moist and are topped with a cinnamon sugar mixture that makes them taste just like a snickerdoodle cookie.

Ingredients

  • 1/2 c. unsalted butter softened
  • 2/3 c. granulated sugar
  • 1 egg
  • 1 1/2 t. vanilla
  • 1/2 c. milk
  • 1/4 c. plain Greek yogurt or sour cream
  • 1 2/3 c. all-purpose flour
  • 1 1/2 t. baking powder
  • 1/4 t. baking soda
  • 1/2 t. ground cinnamon
  • 1/2 t. salt
  • Topping:
  • 3 T. butter, melted
  • 1/3 c. sugar
  • 2 t. ground cinnamon

Steps

  1. Preheat oven to 375 degrees. Spray a muffin pan generously with non-stick cooking spray; set aside.
  2. Add the butter and sugar to a large mixing bowl; cream together for about 2 minutes, until smooth and well combined. Add egg, vanilla, milk and Greek yogurt; mix until combined.
  3. Add flour, cinnamon, salt, baking powder and soda; fold in using a rubber spatula, just until combined. Don't over mix.
