Ingredients

• 1 box white cake mix
• 1 c. buttermilk
• 1/2 c. vegetable oil
• 4 large egg whites
• 1 t. vanilla extract
• 1/2 c. unsalted butter
• 1 c. granulated sugar
• 1 c. evaporated milk
• 3 large egg yolks
• 1 t. vanilla extract
• 1 1/2 c. sweetened shredded coconut
• 1 c. chopped pecans

Steps

1. Preheat oven to 350° F. Grease and flour two 9" round cake pans.
2. In a large bowl, combine the cake mix, buttermilk, oil, egg whites, and vanilla extract; beat on medium speed until well combined and smooth. Pour the batter evenly into the prepared cake pans.
3. Bake 25-30 minutes, or until a wooden toothpick inserted into the center comes out clean.
