Description
This delicious potato dish is like a baked potato but in casserole form. The bacon can be omitted for a vegetarian option. It's simple to prepare and is ready in a little over an hour.
Ingredients
non-stick cooking spray
3 lb. yellow Yukon Gold potatoes, peeled and diced
1 small yellow onion, diced
2 t. minced garlic
1 lb. bacon, cooked and crumbled (not thick-cut)
1 c. mayonnaise
1 c. shredded Cheddar cheese
1 t. onion powder
1 t. garlic powder
1/2 t. salt
1/4 t. black pepper
2 green onions, sliced

Preheat the oven to 350 degrees F. Spray a 9×13" baking dish with non-stick cooking spray.
Place potatoes, onion, garlic, cooked bacon, mayonnaise, Cheddar cheese, onion powder, garlic powder, salt and pepper, in the prepared baking dish. Stir well. Cover the dish with aluminum foil.
Bake 1 hour or until the potatoes are tender. Stir.
Serve, garnished with the green onions.
