Ingredients

  • 8 oz. packaged sliced fresh mushrooms, cleaned
  • 2 T. butter, melted
  • 6 skinless, boneless chicken breasts
  • 1/2 c. all-purpose flour
  • 1/3 c. butter
  • 3/4 c. Marsala wine
  • 1/2 c. chicken stock
  • 1/2 t. salt
  • 1/8 t. pepper
  • 1/2 c. shredded Mozarella cheese
  • 1/2 c. Parmesan cheese
  • 2 green onions, chopped

Steps

  1. Preheat oven to 450 degrees.
  2. Cook mushrooms in 2 T. butter in a large non-stick skillet over medium-high heat, stirring constantly, 3-5 minutes, or just until tender. Remove from heat; set aside.
  3. Cut each chicken breast in half lengthwise. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/8 in. thickness, using a meat mallet or rolling pin.
