Description
This low card salad is healthy, full of protein and so easy to make. It's creamy and delicious. Serve it alone, on bread, or in a tortilla or lettuce wrap.
Ingredients
- 2 c. cooked, shredded chicken (canned or rotisserie chicken makes it easy)
- 2 avocados, peeled and pitted
- 1/4 c. mayonnaise
- 1/4 c. diced red onion
- 1 T. freshly chopped cilantro, optional
- 2 t. freshly squeezed lime juice
- 1 t. garlic powder
- 1/2 t. salt
Steps
- In a bowl, add all ingredients; stir well, breaking down the avocado.
- Serve immediately.
- Left overs: press down plastic wrap tightly on the surface of the salad to keep the avocado from turning brown and refrigerate. It will keep for 1-2 days.
