Lemon Poppy Seed Cookies
Ingredients
✔ 1 cup almond flour
✔ ¼ cup coconut flour
✔ ½ teaspoon baking soda
✔ ¼ teaspoon salt
✔ 2 tablespoons poppy seeds
✔ ¼ cup coconut oil (melted)
✔ ¼ cup honey or maple syrup
✔ 1 egg
✔ 1 teaspoon vanilla extract
✔ Zest of 1 lemon
✔ 1 tablespoon fresh lemon juice
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, mix almond flour, coconut flour, baking soda, salt, and poppy seeds.
3. In another bowl, whisk melted coconut oil, honey (or maple syrup), egg, vanilla extract, lemon zest, and lemon juice.
4. Combine the wet and dry ingredients and stir until smooth.
5. Scoop dough onto the tray, pressing down slightly to flatten.
6. Bake for 10–12 minutes until edges are golden.
7. Cool for 5 minutes on the tray before transferring to a wire rack.
