Description
These zucchini boats are much like pizza only healthier for you. Add toppings and seasonings to your taste and serve as a main dish, appetizer or snack.
Ingredients
- 4 medium zucchini
- 2T. cold pressed, extra virgin olive oil, plus extra for drizzling
- 1 small yellow onion, diced
- ½ sweet bell pepper, any color, diced
- 3 cloves garlic, minced
- 1 large tomato, sliced or diced or cherry tomatoes, sliced in halves
- several basil leaves, chopped
- 1/4- 1/3 c. grated Pecorino or Parmesan cheese
- ½ c. shredded Mozzarella, optional
- 1 c. marinara sauce, optional
- **optional ingredients: use your favorite pizza toppings such as spinach, olives, artichoke hearts to the mixture, if desired. You could even add slices of pepperoni, if you'd like.
Steps
- Preheat oven to 425 degrees. Lightly grease a baking dish or line a baking sheet with parchment paper or aluminum foil.
- Trim the stem end of the zucchini; slice the zucchini in half lengthwise. Carefully scoop out the soft center flesh with a spoon; set aside. Place the zucchini halves on the baking dish; drizzle with olive oil; season with salt and pepper.
- Finely chop the scooped zucchini flesh; set aside.
