Description

This easy to make pasta salad is great to serve to family or guests or take to a pot luck. It's prepared with bowtie pasta and classic Mexican inspired ingredients and flavors.

Ingredients

12 oz. bowtie pasta, cooked al dente, drained, and cooled
15 oz. can black beans, drained and rinsed
15 oz. can corn, drained and rinsed
2 c. grape or cherry tomatoes, chopped
1 jalapeno, seeded and diced
1/2 c. red onion, diced
1/3 c. cilantro, chopped
3/4 c. avocado dressing, store bought or homemade*
2 large avocados, peeled, pitted and diced
1 c. queso fresco cheese, crumbled
lime wedges, optional garnish

Cook pasta in a pot of well salted boiling water until al dente, about 9-11 minutes. Drain; allow to cool.

In a large bowl, stir together the cooled pasta, black beans, corn, grape tomatoes, jalapeno, red onion, and cilantro until combined.

Drizzle on the dressing; toss gently combine to coat the salad.

Serve immediately or refrigerate it overnight before serving.

Just before serving, sprinkle on the diced avocado and cheese.

Serve with lime wedges for garnish.

10 servings.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

*Bolthouse Farm’s Cilantro Avocado dressing can be found in the refrigerated dressings in Walmart or supermarket.
