Description
This easy to make pasta salad is great to serve to family or guests or take to a pot luck. It's prepared with bowtie pasta and classic Mexican inspired ingredients and flavors.
Ingredients
- 12 oz. bowtie pasta, cooked al dente, drained, and cooled
- 15 oz. can black beans, drained and rinsed
- 15 oz. can corn, drained and rinsed
- 2 c. grape or cherry tomatoes, chopped
- 1 jalapeno, seeded and diced
- 1/2 c. red onion, diced
- 1/3 c. cilantro, chopped
- 3/4 c. avocado dressing, store bought or homemade*
- 2 large avocados, peeled, pitted and diced
- 1 c. queso fresco cheese, crumbled
- lime wedges, optional garnish
Steps
- Cook pasta in a pot of well salted boiling water until al dente, about 9-11 minutes. Drain; allow to cool.
- In a large bowl, stir together the cooled pasta, black beans, corn, grape tomatoes, jalapeno, red onion, and cilantro until combined.
- Drizzle on the dressing; toss gently combine to coat the salad.
