Description

This is the perfect dessert to serve to a large crowd anytime of the year, but especially in the summer when you don't want to use your oven. It has layers of graham crackers, marshmallow fluff, Cool Whip and chocolate ganache.

Ingredients

2 1/2 c. chocolate chips
2 c. heavy whipping cream
16 oz. Cool Whip, thawed
7 oz. marshmallow fluff
2 c. mini marshmallows
14.4 oz. graham crackers
marshmallows, graham cracker crumbs and chocolate chunks, for garnish

Chocolate Ganache:
Place the chocolate chips in a bowl.

In a small saucepan, warm the heavy whipping cream until it comes to a simmer. Pour this over the chocolate. Allow it to sit for a few minutes; stir until melted and smooth. Place in refrigerator while preparing remaining ingredients.

Cake:
In a large bowl, combine the whipped topping, marshmallow fluff and marshmallows. Spread a thin layer of this on the bottom of a 13x9 pan to anchor the graham cracker layer.

Add a layer of graham crackers, filling in any gaps with graham crackers cut to size.

Top with one third of the marshmallow mixture, spreading it in an even layer.

Add half of the chocolate ganache.

Repeat with a layer of graham crackers, another third of the marshmallow mixture and the remaining ganache.

Top with a final layer of graham crackers and the final one third of the marshmallow mixture.

Cover. Refrigerate for at least 4 hours or up to overnight.

Serve, garnished with graham cracker crumbs, chocolate chunks and marshmallows, if desired.
