Description

This classic southern relish originated in Louisiana. The name comes from the French word "chou" which means cabbage. It's tart, sweet, spicy and crunchy and is made from a variety of vegetables. Serve it on sandwiches, burgers, or even as a side dish.

Ingredients

1 small cabbage, finely chopped
6 - 8 green or red tomatoes, chopped
6 medium bell peppers, finely chopped
6 large onions, finely chopped
2 hot peppers, finely chopped
3 c. sugar
5 c. white or apple cider vinegar
1/4 c. salt or pickling salt

Place all ingredients in a large pot; bring to a boil. Reduce heat; cook for 20 to 25 minutes or until desired tenderness is achieved.

Divide equally into pint jars; seal. Refrigerate.

Makes 6-8 pints.
