Description
This classic southern relish originated in Louisiana. The name comes from the French word "chou" which means cabbage. It's tart, sweet, spicy and crunchy and is made from a variety of vegetables. Serve it on sandwiches, burgers, or even as a side dish.
Ingredients
- 1 small cabbage, finely chopped
- 6 - 8 green or red tomatoes, chopped
- 6 medium bell peppers, finely chopped
- 6 large onions, finely chopped
- 2 hot peppers, finely chopped
- 3 c. sugar
- 5 c. white or apple cider vinegar
- 1/4 c. salt or pickling salt
Steps
- Place all ingredients in a large pot; bring to a boil. Reduce heat; cook for 20 to 25 minutes or until desired tenderness is achieved.
- Divide equally into pint jars; seal. Refrigerate.
- Makes 6-8 pints.
