Description

This meal is quick and easy to prepare. The best thing is though, it's delicious, comforting and satisfying.

Ingredients

4 skinless, boneless, chicken breasts
1 c. long-grain white rice, uncooked
10.5 oz. can cream of mushroom soup
10.5 oz. can cream of chicken soup
1 1/2 c. chicken broth
1 c. milk
1/2 c. grated Parmesan cheese
1/2 t. garlic powder
1/2 t. onion powder
1/4 t. black pepper
1/4 t. dried thyme
2 T. butter, melted
1/4 c. chopped fresh parsley, optional

Preheat oven to 350 degrees F.

Place the uncooked rice evenly in the bottom of a greased 9x13" baking dish.

In a large bowl, combine both soups, chicken broth, milk, Parmesan cheese, garlic and onion powders, black pepper, and dried thyme; stir well.

Pour half of the soup mixture over the raw rice.

Arrange the chicken breasts on top.

Pour the remaining soup mixture over the chicken.
Drizzle the melted butter over the top. Cover the dish with aluminum foil.

Bake for 1 hour. Remove the foil. Bake for another 15-20 minutes, or until the chicken is cooked through and the rice is tender.

Serve, garnished with chopped fresh parsley, if desired.

4-6 servings.
