2 c. leftover cold mashed potatoes, divided
1/2 c. flour
1/2 t. salt
1/8 t. black pepper
1 egg
1 T. fresh chives, chopped
2 T. butter
Optional toppings: sour cream, applesauce, caramelized onions, or savory jams

Combine cold potatoes, 1/3 c. flour, salt, and pepper in a small bowl. Lightly mix with a spoon or fork to combine.

Make a well in the center of this mixture; crack the egg into the well; whisk; fold into the potato mixture. Gently stir in the chives.

Add more flour to the mixture as needed, until it can be easily formed into patties, being careful not to use too much flour.

Melt the butter in a skillet over medium heat.

Form 4 patties with the potato mixture; add them to the skillet; cook the patties until golden brown on both sides, about 5 to 7 minutes per side.

Serve, garnished with more chives and choice of optional toppings.
