Serve these delicious, savory potato cakes with your favorite Irish meal or even as a main dish. They are made with simple ingredients and come together quickly.
Ingredients
- 2 c. leftover cold mashed potatoes, divided
- 1/2 c. flour
- 1/2 t. salt
- 1/8 t. black pepper
- 1 egg
- 1 T. fresh chives, chopped
- 2 T. butter
- Optional toppings: sour cream, applesauce, caramelized onions, or savory jams
Steps
- Combine cold potatoes, 1/3 c. flour, salt, and pepper in a small bowl. Lightly mix with a spoon or fork to combine.
- Make a well in the center of this mixture; crack the egg into the well; whisk; fold into the potato mixture. Gently stir in the chives.
- Add more flour to the mixture as needed, until it can be easily formed into patties, being careful not to use too much flour.
