These soft, thick and chewy chocolate chip cookies are just the thing to serve or bring for Easter. Dress them up to impress everyone with spring colored M&M's and you have the perfect dessert.

Ingredients

3/4 c. unsalted butter, at room temperature
1 c. brown sugar
1/2 c. granulated sugar
1 egg, at room temperature
1 T. vanilla extract
2 1/2 c. all-purpose flour, spooned and leveled
2 t. cornstarch
1 t. baking soda
1/2 t. salt
12 oz. semi-sweet chocolate chips
1 c. M&Ms, plus more to top the cookie, if desired

Line a small baking sheet with parchment paper.

Cream butter and both sugars together in a large bowl; beat in the egg and vanilla until thoroughly combined.

Whisk together flour, cornstarch, baking soda, and salt in a small bowl.

Gradually add the flour mixture to the wet ingredients, mixing just until combined. Fold in chocolate chips and M&Ms.

Use a cookie scoop to scoop out about 2 T. cookie dough; roll into balls. Place balls on the prepared baking sheet. Press a few M&Ms onto the top of each cookie, if desired.

Cover the cookie dough balls with plastic wrap. Freeze for at least 1 hour or up to overnight. If freezing overnight, let cookie dough balls sit at room temperature for 10 minutes before baking.

Preheat oven to 350 degrees F.

Bake for 10 to 12 minutes. Cookies will appear slightly under-baked. Immediately press more candies and chocolate chips into the top of the cookies, if desired.

Let cookies cool for several minutes on baking sheet before transferring to a cooling rack.

Store in an airtight container for up to 1 week.
