Everyone will feel like they're in the wizarding world of Harry Potter when they try these butterbeer cupcakes. The cupcakes are fluffy and soft and the frosting is out of this world delicious.

Ingredients

Cupcakes:
1 1/2 c. all-purpose flour
1 1/2 t. baking powder
1/4 t. salt
1/2 c. unsalted butter, at room temperature
1 c. granulated sugar
2 large eggs
1 t. vanilla extract
1/2 c. buttermilk
1/4 c. butterbeer (or substitute cream soda)
1/4 t. butterscotch extract (for extra flavor, optional)

Butterscotch Buttercream Frosting:
1 c. unsalted butter, at room temperature
3 c. powdered sugar
1/4 c. butterscotch sauce (store-bought or homemade)
2 t. heavy cream
1/2 t. vanilla extract
pinch of salt

Cupcakes:
Preheat oven to 350 degrees F. Line a muffin tin with cupcake liners.

In a small bowl, whisk together flour, baking powder, and salt.

In a large bowl, beat together butter and sugar until light and fluffy.

Add eggs, one at a time, beating well after each addition; add vanilla extract.

Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk and butterbeer. Start and end with the dry ingredients.

If using, add the butterscotch extract; stir to combine.

Divide the batter evenly between the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a wooden toothpick comes out clean. Let the cupcakes cool completely.

Butterscotch Buttercream Frosting:
In a large bowl, beat the softened butter until smooth and creamy.

Gradually add powdered sugar, 1 c. at a time, beating well after each addition.

Mix in the butterscotch sauce, heavy cream, vanilla extract, and salt; beat until smooth and fluffy.

Once the cupcakes are completely cooled, frost them generously with the butterscotch buttercream.

Serve.
