Everyone will feel like they're in the wizarding world of Harry Potter when they try these butterbeer cupcakes. The cupcakes are fluffy and soft and the frosting is out of this world delicious.
Ingredients
- Cupcakes:
- 1 1/2 c. all-purpose flour
- 1 1/2 t. baking powder
- 1/4 t. salt
- 1/2 c. unsalted butter, at room temperature
- 1 c. granulated sugar
- 2 large eggs
- 1 t. vanilla extract
- 1/2 c. buttermilk
- 1/4 c. butterbeer (or substitute cream soda)
- 1/4 t. butterscotch extract (for extra flavor, optional)
- Butterscotch Buttercream Frosting:
- 1 c. unsalted butter, at room temperature
- 3 c. powdered sugar
- 1/4 c. butterscotch sauce (store-bought or homemade)
- 2 t. heavy cream
- 1/2 t. vanilla extract
- pinch of salt
Steps
- Cupcakes:
- Preheat oven to 350 degrees F. Line a muffin tin with cupcake liners.
- In a small bowl, whisk together flour, baking powder, and salt.
