Description

This pea salad is easy to make and delicious. It's made with fresh or frozen peas, feta cheese, shallot, Greek yogurt, mint, and dill for a super fresh side dish anytime of the year.

Ingredients

1 lb. frozen petite peas, or freshly shelled peas
Kosher salt, and freshly ground black pepper
1/2 c. packed fresh dill sprigs, plus more for garnish
1/3 c. packed fresh mint leaves
1/4 c. non-fat Greek yogurt
1 lemon
2 t. extra-virgin olive oil
1/2 shallot, minced
1/2 c. crumbled feta cheese, for garnish
1 small radish, thinly sliced, for garnish

Bring a medium pot of lightly salted water to a boil.

Fill a large bowl with ice water.

When the water boils, add the peas; blanch, stirring once or twice, until they' re bright green, about 1 minute for frozen and 2 to 3 minutes for fresh.

Immediately drain; transfer to the ice water; let sit until cooled, just 1-2 minutes; drain again.

Measure 1/2 c. cooked peas; transfer to a blender or mini food processor. Add the dill, mint, yogurt, and a pinch of salt and a few grinds of fresh black pepper.

Zest the entire lemon into the blender; cut the lemon in half; squeeze in some of the juice from one of the halves. Blend until smooth. Taste; add more lemon juice, salt and pepper.

Transfer the remaining drained peas to a serving bowl along with the shallot; drizzle on the dressing, to taste. Toss to coat.

Serve immediately, garnished with the feta cheese, radishes, and fresh herbs.
