Description
This pea salad is easy to make and delicious. It's made with fresh or frozen peas, feta cheese, shallot, Greek yogurt, mint, and dill for a super fresh side dish anytime of the year.
Ingredients
- 1 lb. frozen petite peas, or freshly shelled peas
- Kosher salt, and freshly ground black pepper
- 1/2 c. packed fresh dill sprigs, plus more for garnish
- 1/3 c. packed fresh mint leaves
- 1/4 c. non-fat Greek yogurt
- 1 lemon
- 2 t. extra-virgin olive oil
- 1/2 shallot, minced
- 1/2 c. crumbled feta cheese, for garnish
- 1 small radish, thinly sliced, for garnish
Steps
- Bring a medium pot of lightly salted water to a boil.
- Fill a large bowl with ice water.
- When the water boils, add the peas; blanch, stirring once or twice, until they' re bright green, about 1 minute for frozen and 2 to 3 minutes for fresh.
