Description

These sausage muffins are made with just 4 ingredients, breakfast sausage, shredded cheese, eggs and Bisquick. They're great to make in advance for a grab and go breakfast for busy people.

Ingredients

1 lb. breakfast sausage roll, any flavor
4 eggs
1 c. shredded sharp Cheddar cheese (pre-shredded is fine)
1 c. Bisquick baking mix
non-stick cooking spray

Preheat the oven to 350 degrees F. Grease a 12 cup muffin pan with non-stick cooking spray; set aside.

Cook and crumble the sausage in a skillet over medium-high heat until no longer pink. Discard fat. Set the sausage aside to cool slightly.

In a large bowl, lightly beat the eggs. Add the shredded cheese, Bisquick, and the cooked sausage; stir well.

Fill the muffin cups about three-fourths full with the mixture.

Bake 18-20 minutes, or until golden brown on top.
