Description

This simple salad has crunchy veggies, textures and flavors and is coated with a creamy dressing. People just won't be able to get enough, it's so scrumptious.

Ingredients

1 head broccoli
1 head cauliflower
1 c. mayonnaise
2 T. apple cider or white vinegar
1/4 c. sugar
1 t. salt
1 c. Cheddar cheese, shredded
8 slices bacon, cooked

Cook the bacon; place on a paper towel lined plate; set aside.

Cut the broccoli and cauliflower into bite-size pieces. and combine them in a large bowl.

Add the mayonnaise, vinegar, sugar, and salt in another bowl; whisk until well combined.

Pour the dressing over the broccoli and cauliflower; stir until coated thoroughly. Add the cheese; stir.

Refrigerate for about 1 hour before serving to allow the flavors to blend together.

Crumble the cooked bacon; add it just before serving, so that it stays crispy.

Serve.

12 servings.

* This salad is a bit on the sweeter side. If wanting a less sweet dressing, reduce the sugar to 1/8 cup.

** Optional additional ingredients: dried cranberries, raisins, green onions, sunflower seeds, pumpkin seeds.
