Ingredients
- 1, 8-ounce box of macaroni and cheese
- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 cup half and half
- 1/2 teaspoon salt
- 1 cup grated sharp cheddar cheese
- 1/2 cup all purpose flour
- 1 egg, lightly beaten
- 1 cup dried bread crumbs
- Grated Parmesan cheese for garnish
- Canola oil for frying
Steps
- 1 Cook macaroni and cheese according to package directions.
- 2 While the mac and cheese is cooking prepare a white sauce. Melt butter in a medium-sized, heavy saucepan over medium heat. Whisk in 2 tablespoons of flour and cook for 2 minutes. Slowly add half and half while whisking so the mixture is smooth and not lumpy. Cook for about 5 minutes, whisking occasionally, until the mixture is thickened. Stir in salt and set aside. When macaroni and cheese is finished cooking, and you’ve added the cheese packet and milk according to the package directions, stir in the white sauce and fold in the grated cheese. Pour mixture out onto a plate and place in the refrigerator until it’s completely cold. It will be sticky.
- 3 Place the flour in one bowl, the egg in another and the bread crumbs in a third bowl. Using damp hands, form the cold macaroni mixture into balls about the size of a walnut, making sure to pack them tightly to remove any air pockets. Roll each ball through the flour, dip in the egg, and roll through the bread crumbs.
