Chocolate Salami

Description
This decadent, delicious Italian treat is made with crunchy vanilla wafers, dark chocolate, and nuts. It got its name because it resembles a salami but definitely contains no meat at all.
Ingredients
2 c. vanilla wafers
3/4 c. toasted hazelnuts, pistachios, walnuts or favorite nuts, coarsely chopped
1 c. plus 2 T. dark chocolate
1/4 c. plus 2 T. (about 3/4 stick) unsalted butter, soft
6 T. whole milk
splash of alcohol, like Kahlua, Amaretto, brandy, orange liqueur or rum, optional
powdered sugar, for coating

Place wafers in a large ziplock bag; crush using a rolling pin until there are small and coarse crumbs. Transfer crumbs to a large bowl; stir in nuts.
In a medium microwave safe bowl, place chocolate and butter. Heat in the microwave until melted and smooth. Add milk and alcohol, if using; stir. Add chocolate mixture to the crumb mixture; mix until combined.
Spread the mixture out on parchment paper or plastic wrap; shape into a log using a spatula or a spoon. Roll up the paper; wrap it like candy.
Refrigerate for several hours until firm.
After chilling, remove the log from the paper; dust with icing sugar on all sides; remove excess sugar with a brush—or your fingertips.
Cut into circles.
Serve.
Makes 2 rolls.
