Description
Making your own cream cheese is easy and tastes so much better than store bought. It takes only 3 ingredients and about 20 minutes to make. Use it to make a veggie dip, a spread for bagels or any place you use a soft cream cheese.
Ingredients
4 c. fresh whole milk
2 T. plain white vinegar or 1/8 c. freshly squeezed lemon juice
1/4 t. salt

In a saucepan, bring the milk to a boil.
Once boiling, turn the stove to very low heat; add vinegar or lemon juice while stirring with a spatula. The curds will begin to separate and curdle. Remove from the heat.
Strain the curds in a mesh strainer. Rinse with cold water. Strain again with a cheesecloth. Squeeze out excess liquid.
Transfer curds to a food processor or a blender; add salt. Blend until completely smooth and creamy.
Pour into an airtight container. Refrigerate for at least 30 minutes before serving.
