Description
This casserole is perfect for weeknight or Sunday dinners. It starts with a boxed stuffing mix and cooked chicken, chicken broth and cream of chicken soup, along with more seasonings. It's easy to prepare and can be on your table in about an hour.
Ingredients
4 c. cooked, shredded chicken, from about 3 large breasts or rotisserie chicken
6 oz. box Stove Top stuffing mix
10.5 oz. can cream of chicken soup
1/2 c. full-fat sour cream
1 c. low-sodium chicken broth
1/2 t. garlic powder
1/2 t. onion powder
salt and black pepper, to taste
2 T. unsalted butter, optional
chopped parsley, for garnish

Preheat oven to 350 degrees F. Grease a baking dish with butter or cooking spray.
Casserole:
In a large bowl, mix together the shredded chicken, stuffing mix, cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper; add the butter for extra richness.
Transfer the mixture to the prepared baking dish, spreading it out evenly. Cover with aluminum foil. Bake for 30 minutes.
Remove the foil. Bake for another 10-15 minutes, or until the top is golden brown and the casserole is heated through.
Serve hot, garnished with chopped parsley, if desired.
