This Caesar salad with chicken is incredibly delicious. It's made with homemade croutons, tender, grilled chicken, romaine lettuce all topped with a no egg yolk, no anchovy Caesar dressing.

Ingredients

Croutons:
3 T. extra-virgin olive oil
2 T. freshly chopped parsley
1 clove garlic, grated
Kosher salt and freshly ground black pepper, to taste
4 c. ciabatta bread cubes

Chicken:
3 T. extra-virgin olive oil
2 T. freshly squeezed lemon juice
2 t. lemon zest
1 clove garlic, grated
1 t. Kosher salt and 1/2 t. freshly ground black pepper
1 1/2 lb. boneless, skinless chicken breasts or thighs

Dressing:
1/4 c. mayonnaise
1/4 c. buttermilk
3 T. freshly grated Parmesan cheese
1 clove garlic, grated
1 T. freshly squeezed lemon juice
1 1/2 t. Dijon mustard
1/2 t. Worcestershire sauce
Kosher salt and freshly ground black pepper, to taste

Salad:
2 heads romaine lettuce, roughly chopped
1/4 c. freshly grated Parmesan cheese

Croutons:
Preheat oven to 400 degrees F.

In a small bowl, whisk together olive oil, parsley and garlic; season with salt and pepper, to taste.

Spread bread cubes out in a single layer on a baking sheet. Stir in the olive oil mixture with the bread cubes; toss to combine. Bake until crisp and golden, about 13-15 minutes; set aside.

Chicken:
In a small bowl, combine olive oil, lemon juice, lemon zest, garlic, salt and pepper.

In a gallon size zip style bag or large bowl, combine chicken and olive oil mixture; marinate for at least 2 hours, turning the bag occasionally. Discard the marinade.

Preheat grill to medium-high heat.

Cook the chicken on the grill, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side. Let cool; dice into bite-size pieces.

Dressing:
In a medium bowl, whisk together mayonnaise, buttermilk, Parmesan cheeese, garlic, lemon juice, Dijon mustard and Worcestershire sauce; season with salt and pepper.

Salad Assembly:
Place romaine lettuce in a large bowl; add the chicken and croutons. Pour the dressing on top; gently toss to combine.

Serve, topped with Parmesan cheese.
