Description
Warm weather calls for cool, delicious beverages. Whether enjoyed it poolside or at home, this frosted lemonade is simple to make and much more economical than the restaurant version.
Ingredients
1 1/2 c. freshly squeezed lemon juice from about 6 large lemons
1 c. granulated sugar
1 c. VERY cold water*
6 c. vanilla bean ice cream
4-5 drops yellow food coloring, optional
4 sliced lemons, optional garnish

Add the lemon juice and sugar to a 7 to 8 c. blender; blend at low speed on either the milkshake or smoothie setting for 30-45 seconds. (This is a quick and easy way to dissolve and blend the lemon juice and sugar)
While keeping the mixer at low speed on the milkshake or smoothie setting, drizzle in the water; blend for 10-15 seconds.
Add the ice cream to the lemonade. With the lid secure, pulse on Low until the ice cream and lemonade are well blended.
Pour into chilled glasses. Serve immediately, garnished with lemon slices, if desired.
7 servings, each 8 oz.
Tips:
The lemonade can be refrigerated until ready to add the ice cream. The frosted lemonade is intended to be served immediately after the ice cream is added.
* Make sure that the water is VERY cold. Ice cubes can be added to the water first, let sit for a few minutes, then remove the ice cubes before adding the water to the blender.
Glasses can be placed in the freezer before serving. Pouring the lemonade into a frosty glass will keep it cooler for longer.
