Description

This beautiful salad is made with fresh ingredients with lots of colors and textures. It's easy to prepare, healthy and delicious.

Ingredients

4 oz. fresh baby spinach
1/2 c. chopped broccoli
1/2 ripe avocado, sliced or diced
1/4 c. blueberries
1/4 c. crumbled Feta cheese
2–4 T. dried cranberries
2–4 T. unsalted, roasted sunflower seeds
black pepper, to taste

Poppy Seed Ranch Dressing:
1/2 c. plain Greek yogurt or sour cream
1/4 c. buttermilk, or more if desired
1/4 c. good quality mayonnaise
1 clove garlic, minced
1/2 t. lemon juice or white vinegar
1 t. poppy seeds
1/2 t. dried parsley
1/2 t. dried dill
1/4 t. onion powder
1/4 t. paprika
1/8–1/4 t. garlic powder, or to taste
1/8-1/4 t. sea salt
1/8 t. black pepper

Dressing: Combine the minced garlic, lemon juice, and salt; add Greek yogurt, buttermilk, mayonnaise, poppy seeds, parsley, dill, onion powder, paprika, garlic powder, salt, and pepper. Whisk thoroughly. Refrigerate to blend flavors.

Salad: Rinse and dry spinach.

In a large bowl, combine spinach, broccoli, avocado, blueberries, cranberries, Feta cheese, and sunflower seeds.

Toss the salad with the chilled dressing.

Serve, seasoned with black pepper, to taste.
