Position an oven rack to the middle of the oven. Preheat oven to 350 degrees F. Line a large baking sheet with good quality parchment paper. **

Use a 1 T. cookie scoop to scoop the cottage cheese; release scoops onto the prepared baking sheet, spacing the scoops about 2 inches apart. Use the back of a metal spoon to flatten them to about 3/16 to 1/4 inch thick. Sprinkle on the seasoning.

Bake for about 40-50 minutes or until edges are dark brown and the surface is browned on the chips. The baking time will vary on the thiness of the chips, so start checking around 20 minutes. Ideally, the surface of the chips should be a golden to medium a brown. The browner the chips will be crunchier. Be sure to watch the chips closely towards the end of the baking time.

When done, remove the chips from the oven. Let cool completely before consuming because they won't be fully set. The chips continue to firm up while cooling and should be fully firm and set in about 20-30 minutes.

Store in an airtight container or sealed bag and enjoy within a few hours. If they're left out, the moisture in the air will cause them to turn a soft. Store leftovers not eaten in a few hours in the refrigerator or freezer.

Makes about 16 chips.

Tips:
*It's best to use whole milk cottage cheese with a high amount of protein like Culture brand, which contains 14 grams or protein per 1/2 cup. Many other brands only contain 12-13 grams. It will still work with a lower amount of protein, but the chips will be chewy instead of crunchy.

** Use a good quality brand of parchment paper like the Reynolds brand or Kirkland Paper Chef to ensure that they have a non-stick coating or the chips may stick to the paper, run together or burn.
