Description

This flavor filled salad is a refreshing summer salad that's marinated in an herb infused vinaigrette. It's a great way to use garden tomatoes.

Ingredients

1 1/2 lb. ripe tomatoes
6 T. extra virgin olive oil
2 T. red grape vinegar or red wine vinegar
1/3 c. red onion, finely chopped
1 clove garlic, minced
2 t. fresh basil, chopped
2 t. fresh parsley, finely chopped
1 t. fresh dill, finely chopped
salt and freshly ground pepper, to taste

Rinse and pat the tomatoes dry. Slice them into 1/3" thick rounds; arrange in a large shallow dish.

In a bowl, whisk together olive oil, vinegar, onion, garlic, basil, parsley, dill, salt, and black pepper until well combined. Pour the marinade evenly over the tomato slices. Cover.

Refrigerate for at least 2 hours, flipping the tomatoes once halfway to marinate evenly.

Serve chilled or at room temperature.
