Marinated Tomato Salad

Description

This flavor filled salad is a refreshing summer salad that's marinated in an herb infused vinaigrette. It's a great way to use garden tomatoes.

Ingredients

  • 1 1/2 lb. ripe tomatoes
  • 6 T. extra virgin olive oil
  • 2 T. red grape vinegar or red wine vinegar
  • 1/3 c. red onion, finely chopped
  • 1 clove garlic, minced
  • 2 t. fresh basil, chopped
  • 2 t. fresh parsley, finely chopped
  • 1 t. fresh dill, finely chopped
  • salt and freshly ground pepper, to taste

Steps

  1. Rinse and pat the tomatoes dry. Slice them into 1/3" thick rounds; arrange in a large shallow dish.
  2. In a bowl, whisk together olive oil, vinegar, onion, garlic, basil, parsley, dill, salt, and black pepper until well combined. Pour the marinade evenly over the tomato slices. Cover.
  3. Refrigerate for at least 2 hours, flipping the tomatoes once halfway to marinate evenly.
