Summer Corn Salad

Although it's called Summer Corn Salad, it can be enjoyed year round. It's a refreshing salad that's so delicious, people will ask for the recipe.
Ingredients
Dressing:
4 T. olive oil
6 T. apple cider vinegar
1 t. sugar
1 t. Dijon mustard
freshly squeezed juice from 1 lime
salt and pepper
Corn Salad:
6-8 ears fresh corn, shucked (frozen will work)
2 T. olive oil
1/2 red onion, diced
1/2 red bell pepper, diced
1-2 avocados, seeded, peeled and chopped

Whisk dressing ingredients together; set aside.
Pour 1-2 inches of water to a large, deep skillet; bring to a boil. Add the corn ears; cook for 3-4 minutes, rotating to cook on all sides. Drain.
Heat grill on medium-high heat. Brush corn lightly with olive oil.
Grill for a few minutes, rotating while cooking, until golden on all sides.
Let the corn cool until it's cool to the touch.
Cut corn off of the cobs; add to a bowl. Add remaining salad ingredients; drizzle on desired amount of dressing. (There might be some leftover.) Toss to combine.
Refrigerate until ready to serve.
