Description
Although it's called Summer Corn Salad, it can be enjoyed year round. It's a refreshing salad that's so delicious, people will ask for the recipe.
Ingredients
- Dressing:
- 4 T. olive oil
- 6 T. apple cider vinegar
- 1 t. sugar
- 1 t. Dijon mustard
- freshly squeezed juice from 1 lime
- salt and pepper
- Corn Salad:
- 6-8 ears fresh corn, shucked (frozen will work)
- 2 T. olive oil
- 1/2 red onion, diced
- 1/2 red bell pepper, diced
- 1-2 avocados, seeded, peeled and chopped
Steps
- Whisk dressing ingredients together; set aside.
- Pour 1-2 inches of water to a large, deep skillet; bring to a boil. Add the corn ears; cook for 3-4 minutes, rotating to cook on all sides. Drain.
- Heat grill on medium-high heat. Brush corn lightly with olive oil.
