Description
These chocolate cheesecake cups are made with alcohol, so they're definitely an adult dessert. They start with an Oreo cookie crust and then filled with a cheesecake filling with Bailey's Irish Cream and topped with a Bailey's infused whipped cream.
Ingredients
- Crust:
- 2 c. Oreo cookie crumbs, from about 20 cookies, crushed, plus more for optional garnish
- 6 T. unsalted butter, melted
- Cheesecake:
- 1 1/3 c. semi-sweet chocolate chips
- 2 blocks (8 oz. each) cream cheese, at room temperature
- 1/3 c. granulated sugar
- 1/4 c. (2 oz.) Bailey’s Irish Cream
- 1 t. vanilla extract
- 1 c. heavy whipping cream
- Whipped Cream:
- 1 c. heavy whipping cream, chilled
- 2 T. Bailey's Irish Cream
- 2 T. unsweetened cocoa powder
- 2 T. powdered sugar
Steps
- Crust:
- In a medium bowl, combine the cookie crumbs with the butter; mix thoroughly with a fork until all crumbs are evenly coated.
- Divide the crust evenly between 6 serving cups, pressing firmly into the bottom of each cup. Set aside.
