These fancy looking little tarts are easy to make but look like you spent hours making them or got them from a bakery. They start with a vanilla wafer base, then a tangy, slightly sweet cheesecake filling topped with your choice of a canned fruit pie fill

Ingredients

2 - 8 oz. blocks cream cheese, softened
1 c. granulated sugar
1 t. vanilla extract
2 large eggs
12 vanilla wafer cookies
21 oz. can cherry pie filling, blueberry pie filling, or your favorite

Preheat oven to 350 degrees F. Place a paper cupcake liner in each of the 12 cups of a muffin pan.

In a bowl, beat cream cheese with an electric mixer until fluffy. Add sugar and vanilla; beat well. Add eggs, one at a time, beating well after each addition.

Place a vanilla wafer cookie, flat side down, in the muffin cup; top with the cream cheese mixture, filling each to 1/4" from the top of the paper liners.

Bake for 20 minutes.

Allow to cool completely. They will be puffed up initially but will sink as they cool, making a well in each of the centers. Fill the wells with several spoonfulls of pie filling.

Place in the refrigerator to chill before serving.
