4th of July Swirl Pie

Description

This patriotic dessert is great anytime but especially for July 4th, Memorial Day, Flag Day or Labor Day. It's beautiful with the red, white and blue swirled colors but is tasty too. You can make it no-bake with a store bought crust, if you wish.

Ingredients

Crust:
1 1/4 c. graham cracker crumbs, from about 10 full sheets
3 T. granulated sugar
5 T. unsalted butter, melted

Filling:
16 oz. cream cheese, softened
3/4 c. powdered sugar
1 t. vanilla extract
1 c. heavy cream, cold

Red Swirl:
1 c. fresh strawberries, hulled and chopped
2 T. granulated sugar

Blue Swirl:
1 c. fresh blueberries
2 T. granulated sugar

Crust:
Preheat oven to 350 degrees F.

In a bowl, stir together graham crumbs, sugar, and melted butter until evenly moistened. Press into a 9" pie plate and up the sides.

Bake 8–10 minutes until golden; cool completely.

Fruit Purees:
In a small saucepan, combine strawberries and sugar; cook over medium until soft and syrupy, about 5 minutes. Puree and cool.

Repeat with blueberries and sugar. Puree and cool.

Filling:
In a large bowl, beat together the cream cheese, powdered sugar, and vanilla until smooth.

In another bowl, whip heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture.

Pie Assembly:
Spoon one-third of the cream filling into the cooled crust.

Drop spoonfuls of strawberry puree and blueberry puree over filling in alternating dollops.

Top with the remaining filling; add more dollops of each puree.

Using a skewer or a knife, swirl through the top to create a red-white-blue marbled pattern.

Refrigerate at least 4 hours or overnight to set.

Slice with a hot, clean knife for neat layers.

Serve.
