This fabulous sald features fresh spinach, chickpeas, feta cheese, red onion and Kalamata olives topped with a lemon vinaigrette. It's a light and healthy salad that's sure to be enjoyed by all.

Ingredients

Salad:
15 oz. can chickpeas, drained and rinsed
2 c. fresh spinach, chopped
1/2 c. crumbled feta cheese
1/4 c. red onion, thinly sliced
1/4 c. Kalamata olives, pitted and halved

Lemon Vinaigrette:
3 T. olive oil
2 T. lemon juice
1 t. Dijon mustard
1 clove garlic, minced
1/2 t. salt
1/4 t. black pepper

Salad:
In a large bowl, combine the chickpeas, spinach, feta cheese, red onion, and Kalamata olives.

Lemon Vinaigrette:
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until well combined.

Pour the vinaigrette over the salad; gently toss.
