Spicy Roasted Cauliflower with Herb-Infused Oil over Hummus

Description

Everyone will enjoy this simple and delicious appetizer. It's made with flavorful roasted cauliflower, an herbed oil poured over it all over creamy hummus. Serve it with warmed pita bread or crackers for dipping.

Ingredients

Cauliflower:
1 head cauliflower, cut into florets
2 T. olive oil
2 t. smoked paprika
1 t. chili powder
1 t. garlic powder
salt and pepper, to taste

Herbed Oil:
1/3 c. olive oil
1/2 c. fresh herbs, chopped (mix of cilantro, dill, and parsley)
1 clove garlic, grated
1/2 - 1 t. paprika
1/2 to 1 teaspoon chili flakes
2 T. sesame seeds
2 t. lemon zest
1 t. honey

For Serving:
2 c. plain hummus
warmed pita bread or chips

Cauliflower:
Preheat oven to 425 degrees F.

In a bowl, toss the cauliflower florets with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper until evenly coated; transfer to a baking sheet.

Roast in the oven for 20 minutes; toss; roast for another 10 minutes until the cauliflower is tender and charred on the edges.

Herb Oil:
In a heat-safe bowl, mix together the chopped herbs, grated garlic, paprika, chili flakes, sesame seeds, lemon zest, and honey.

Heat the olive oil in a skillet over medium heat until it begins to sizzle for about 5 minutes; pour over the herb mixture in the bowl; stir to combine.

Assembly:
Spread the hummus in a shallow serving bowl. Top with the roasted cauliflower; spoon the chili herb oil over the cauliflower.

Serve immediately with warm pita bread or crispy chips for dipping.
