Everyone will enjoy this simple and delicious appetizer. It's made with flavorful roasted cauliflower, an herbed oil poured over it all over creamy hummus. Serve it with warmed pita bread or crackers for dipping.
Ingredients
- Cauliflower:
- 1 head cauliflower, cut into florets
- 2 T. olive oil
- 2 t. smoked paprika
- 1 t. chili powder
- 1 t. garlic powder
- salt and pepper, to taste
- Herbed Oil:
- 1/3 c. olive oil
- 1/2 c. fresh herbs, chopped (mix of cilantro, dill, and parsley)
- 1 clove garlic, grated
- 1/2 - 1 t. paprika
- 1/2 to 1 teaspoon chili flakes
- 2 T. sesame seeds
- 2 t. lemon zest
- 1 t. honey
- For Serving:
- 2 c. plain hummus
- warmed pita bread or chips
Steps
- Cauliflower:
- Preheat oven to 425 degrees F.
- In a bowl, toss the cauliflower florets with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper until evenly coated; transfer to a baking sheet.
